Things You'll Need:
- 2 5-pound roasting chickens
- 2 teaspoons of oregano
- ¼ pound of garlic butter
- 3 teaspoons of kosher salt
- 1 teaspoon of freshly-ground pepper
- 2 cups of canned tomatoes
- ½ cup of virgin olive oil
- 4 tablespoons of lime juice
- 3 cloves of garlic

Step 1
Grind the pepper and peel and mince the garlic.

Mix the lime juice, 2 teaspoons of kosher salt and ½ cup of virgin olive oil and massage the chickens with this mixture.

Set the chickens in a roasting pan, place this in the oven and cook for 1 hour at 375 degrees.

Sauté the tomatoes, garlic, pepper, oregano, butter and 1 teaspoon of salt for 5 minutes.

Remove the chickens from the oven and drizzle the sauce over them before returning them to the oven.

Lower the temperature of the oven to 350 degrees and continue cooking the chickens for 1 more hour.

Periodically take the chickens out and brush the sauce on them.
