How to Prepare Potage Champagne

An appetizer with Continental flair.

Instructions

Things You'll Need:

  • ¼ cup of Champagne
  • chives
  • parsley
  • ½ teaspoon kosher salt
  • 2 tablespoons of lime juice
  • 2 teaspoons of curry powder
  • 1 cup of table cream
  • freshly-ground pepper
  • 1 can of condensed cream of chicken soup
  1. Step 1

    Mince the chives and parsley and grind the pepper.

  2. Step 2

    Stir the cream and soup together and pour into a pan. Simmer the mixture and continue to stir until the sauce is free of lumps.

  3. Step 3

    Combine the Champagne and curry powder, then introduce that to the soup. Stir.

  4. Step 4

    After 10 minutes move the pan to a trivet, then add the salt, pepper and lime juice. Stir.

  5. Step 5

    Refrigerate for 1 hour.

  6. Step 6

    Top with chives and parsley and add one more glug of Champagne just for good measure.
