Things You'll Need:
- 1 ½ pounds of green beans
- 3 tablespoons of almonds
- kosher salt
- freshly-ground pepper
- 1 red onion
- 3 tablespoons of butter

Step 1
Dip the almonds in boiling water, drain, allow to cool, rub the peels off with paper towels, chop them into fine slivers and toast them in the oven.

Break off the tips and pull off the strings from the beans.

Grind the pepper.

Step 4
Boil the beans in salty water, but remove them from the heat before they get limp and overcooked.

Step 5
Drain the beans in a sieve.

Step 6
Caramelize the onion in 2 tablespoons of butter.

Step 7
Introduce the beans, season and stir in the last 1 tablespoon of butter. Sauté the beans, then add the almonds prior to plating up.
