How to Prepare Cornmeal Waffles

Don't wait for a special occasion to make waffles at home.

Instructions

Things You'll Need:

  • 1 cup of cornmeal
  • ½ cup of whole milk
  • 2/3 cup of buttermilk
  • 2 eggs
  • 1 teaspoon of kosher salt
  • 1 cup of all-purpose flour
  • ½ teaspoon of baking soda
  • 4 teaspoons of shortening
  • 1 ½ cups of water
  • 2 teaspoons of baking powder
  1. Step 1

    Beat the yolks and whites of the eggs separately.

  2. Step 2

    Set the water to boil, then introduce it to the cornmeal, shortening and salt. Stir well.

  3. Step 3

    Spoon into a double boiler and cook for 10 minutes. Stir.

  4. Step 4

    Set the boiler onto a trivet and introduce the egg yolks.

  5. Step 5

    Combine the flour, baking powder and soda, sift them into a bowl, then slowly stir all that into the cornmeal mixture. Just as slowly stir in the whole milk and then the buttermilk.

  6. Step 6

    Fold the egg whites into all this, then pour the batter into a waffle iron and bake.
