How to Prepare Rice Muffins

A very traditional Southern breakfast dish.

Instructions

Things You'll Need:

  • ¾ cup of basmati rice
  • 2 tablespoons of shortening
  • 1 cup of milk
  • 2 ¼ cups of all-purpose flour
  • 1 teaspoon of sea salt
  • 1 egg
  • 5 teaspoons of baking powder
  • ¼ cup of sugar
  • butter
  1. Step 1

    Boil the rice and heat up the shortening in a saucepan.

  2. Step 2

    Mix the flour, salt and baking powder together and sift.

  3. Step 3

    Combine the rice, milk, egg, shortening and sugar and stir well, then add the flour mixture and continue to stir.

  4. Step 4

    Smear butter around the inside of a muffin pan. Spoon the mixture into each cup, but only fill it 2/3 of the way high, to allow the muffins to rise while baking.

  5. Step 5

    Bake for 30 minutes at 425 degrees.
