A breakfast dish beloved by the late John Denver.

From Quick Guide: Gas Griddle Basics
Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups of all-purpose flour
  • 2 eggs
  • 1 tablespoon of sugar
  • 1 teaspoon of kosher salt
  • 3 tablespoons of baking powder
  • 1 tablespoon of cornmeal
  • 1 tablespoon of shortening
  • 1 ½ cups of milk
  1. Step 1

Beat the eggs and melt the shortening in a saucepan. Stir the shortening and milk into the eggs. Heat up the griddle.

  2. Step 2

Mix the flour, salt, sugar, baking powder and cornmeal and sift them into a mixing bowl.

  3. Step 3

Combine the two mixtures, beat very well, then place dollops of all this onto the griddle. When a cake begins to bubble, flip it over to its other side. Needless to say, each side should only be cooked once.
