How to Prepare Carolina Deviled Clams

A traditional Southern appetizer.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 dozen quahog clams
  • 2 tablespoons of aioli
  • ½ cup of celery
  • hot pepper sauce
  • Worcestershire sauce
  • 2 eggs
  • 1 tablespoon of lime juice
  • ½ cup of red onion
  • ¾ teaspoons of curry powder
  • 3 tablespoons of butter
  • ¾ cup of crackers
  • 1 bell pepper

Step1
Crumble the crackers and chop the clams, celery, onion and pepper. Beat the eggs.
Step2
Heat up 2 tablespoons of the butter and sauté the celery, onion, pepper and curry in it.
Step3
When the vegetables go limp take them off the heat, pour them into a mixing bowl with the clams, ½ cup of cracker crumbs, aioli, lime juice and a few shakes of the hot pepper and Worcestershire sauces.
Step4
Mix these ingredients well and spoon them into a muffin pan. Top with ¼ of the crackers and 1 tablespoon of butter, and bake for 15 minutes at 350 degrees.
