How to make Fajita chicken salad

Here is another healthy choice when trying to watch your weight. A fajita chicken salad is very filling and will last for a while also.

Instructions

Things You'll Need:

  • 1 cup Wish-Bone Italian Dressing
  • 1 lb. boneless, skinless chicken breast halves
  • 2 large red, green, or yellow bell peppers, quartered
  • 1 large sweet onion, quartered
  • 4 fajita size flour tortillas
  • 6 cups torn romaine lettuce leaves
  • 1 med lime, cut into wedges (optional)
  1. Step 1

    IN large resealable plastic bag, pour 1/4 cup Wish-Bone Italian dressing over chicken; turn to coat. In another large, resealable plastic bag, pour 1/4 cup dressing over red peppers and onion. Close bags and marinate in refrigerator up to 3 hours.

  2. Step 2

    Remove chicken and vegetables from marinades, discarding marinades. Grill or broil chicken and vegetables, turning once and brushing frequently with remaining 1/2 cup dressing, 12 minutes or until chicken is thoroughly cooked and vegetables are crisp-tender.

  3. Step 3

    Lightly grill tortillas, turning once and brushing with additional dressing, if desired. Tear tortillas into bite size pieces.

  4. Step 4

    To serve, thinly slice chicken and vegetables. Arrange lettuce on serving platter, top with chicken, vegetables, tortillas, and lime. Serve is desired with additional dressing.
