How to Prepare Cold Crab Soufflé

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 16 oz. of Alaska King crab
  • 1 cup of aioli
  • 2 envelopes of gelatin
  • ½ cup of pimiento
  • 1 tsp. of sea salt
  • ½ cup of celery
  • 1 cucumber
  • watercress
  • 4 shallots
  • 1/8 tsp. of freshly-ground pepper
  • ¼ cup of parsley
  • ¼ cup of bell pepper
  • ¼ tsp. of hot pepper sauce
  • ¼ cup of cold water
  • 1 tbsp. of lime juice
  • 1 pint of heavy whipping cream

Step1
Chop the celery, pimiento, parsley, bell pepper and shallots. Grind the pepper. Slice up the cucumber.
Step2
Mix together the crab, pepper, bell pepper, salt, pimiento, celery, hot pepper sauce and parsley and stir.
Step3
Combine the gelatin, lime juice and water, stir, then introduce the aioli before pouring all this into the crab mixture.
Step4
Gently fold in the cream.
Step5
Spoon the mixture into a cup mold and refrigerate for 4 hours.
Step6
Top with cucumber slices and watercress.
