How to Prepare Baked Shrimp and Tomatoes

An East Coast dish with some variations, this is a wonderful recipe that doesn't take too much time to prepare.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1½ lbs. of shrimp
  • 1 lb. of stewed tomatoes
  • Crackers
  • Sea salt
  • Freshly-ground pepper
  • 3 tbs. of butter
  • Mace

Step1
Grind the pepper. Peel, de-vein and wash the shrimp, then boil them until they're pink. Drain them in a sieve.
Step2
Boil the tomatoes for 1 minute, peel them, chop them into rough chunks, then put them back into the boiling water, cover the pot and bring down the heat, then allow them to simmer for 10 minutes.
Step3
Heat the oven to 450 degrees F.
Step4
Take a baking pan, carpet it with the crackers and place little pats of butter here and there.
Step5
Spread the shrimp over the crackers, season with ¼ tsp. of mace and the pepper, spoon on ½ lb. of the tomatoes, place more pats of butter around and finally shake on some salt.
Step6
Add another strata of shrimp, spices and butter, then more crackers and butter. Bake for 20 minutes.
