This recipe is a Pacific Coast delight. Rockfish can make for a great, affordable feast, and is available year-round. It's not hard to prepare baked rockfish so delicious, your guests will think it came from a restaurant. Does this Spark an idea?

Things You'll Need

  • 1 goldeneye rockfish (5 lbs.)
  • Butter
  • Lemons
  • 1 teaspoon sea salt
  • 2 tablespoon water
  • 3 tablespoon ketchup
  • 4 ¼ cups crackers
  • 2/3 cup chopped red onion
  • 2 eggs
  • ¼ teaspoon ground clove
  • Freshly ground pepper
  • 3 tablespoon tawny port wine
  • Skewers or large needle and oven-safe string

Instructions

      Crumble the crackers. Melt a quarter cup of butter.

      Separate the eggs and beat the yolks.

    • 3

      Chop one of the lemons in half and squeeze the juice into a small bowl. Slice the other lemons and set them aside.

      Wash and drain the fish, then chop off the head and tail.

    • 5

      Mix salt, pepper, cloves, egg yolks, butter, onions and crumbs. Stuff mixture inside the fish.

      Thread some kite string or packing twine through a large needle and sew the openings of the fish shut, or use metal or wooden skewers to close them up.

      Preheat the oven to 375 degrees.

      Mix the lemon juice, water, port and ketchup.

      Place the fish in a baking dish and drizzle half of the liquid mixture over it.

      Bake for one hour. Take the dish out of the oven, scatter the crumbs over the fish, then pour on the rest of the liquid.

      Bake 10 more minutes, then top with the lemons.
