How to Prepare Peanut and Carrot Loaf

Peanut and carrot loaf may some odd, but it is a very tasty vegetable dish.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup of peanuts, unsalted
  • 1 cup of carrots
  • 1 teaspoon of parsley
  • 4 eggs
  • 1 cup of cracker crumbs
  • 1 cup of tomato paste
  • 1 ½ teaspoon of shortening
  • Kosher salt
  • Butter
  1. Step 1

    Crush the crackers and gingerly beat the eggs.

  2. Step 2

    Chop up the parsley, peanuts and carrots.

  3. Step 3

    Stir all the ingredients together.

  4. Step 4

    Smear butter around the inside of a baking pan and spoon the ingredients into said pan. Bake for one hour and 15 minutes at 400 degrees.
