How to Prepare Creamed Codfish

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 cup of salted codfish
  • 1 egg
  • 1/8 teaspoon of freshly-ground pepper
  • 2 tablespoons of flour
  • 1 cup of milk
  • 2 tablespoons of butter

Step1
Flake the fish with a fork. Grind the pepper. Beat the egg.
Step2
Soak the fish in cold water, then change out that water after an hour. Repeat this process twice more over the course of three hours. This is to remove the excess salt from the cod. Drain the fish in a sieve.
Step3
Boil the milk in a double boiler, then introduce the fish, and then after 10 minutes, the salt, pepper and butter. Stir to a pleasing thickness, then place the pot on a trivet.
Step4
Stir in the egg and serve.
