How to Prepare Maryland Style Chicken

Maryland style chicken is a dish that, oddly enough, has British, French and Australian variations.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 whole chickens
  • 2 eggs
  • Flour
  • 1 cup of cream
  • Bread crumbs
  • Butter
  • Water
  • Sea salt
  • Freshly-ground pepper

Step1
Grind the pepper and beat the eggs.
Step2
Cut the chickens apart, cleaning out the innards, chopping the chickens into sections, while leaving the breasts intact.
Step3
Simmer the necks and giblets in cold water.
Step4
Dredge each piece of chicken in salt, pepper, egg, then finally bread crumbs. Place in a well-buttered baking pan and bake for 40 minutes at 480 degrees.
Step5
Mix ¼ cup of butter and ¼ cup of hot water. Periodically open the oven and baste the chicken with this liquid.
Step6
After the chicken has thoroughly baked, place it on a warm serving dish, then pour the fat and liquid from the baking pan into a small mixing bowl.
Step7
To that mix in the cream, two tablespoons of flour and the stock that was made from the necks and giblets. Pour this gravy over the chicken and serve.
