Difficulty: Moderately Easy
Things You’ll Need:
- 2 cups of Fuerte avocados
- 2 cups of Stone Crabs
- crackers
- 1 ½ cups of milk
- ½ teaspoon of sea salt
- 3 tablespoons of butter
- 3 eggs
- 4 tablespoons of flour
- 1/8 teaspoon of freshly-ground pepper
- Shortening
Step1
Beat the eggs, crumble the crackers, boil the crabs, melt the butter in a saucepan. Wash and peel the avocado and remove the seed, then chop the avocado into chunks.
Step2
Once the crabs are cooked, take out their spines. Heat the shortening to 360 degrees.
Step3
Mix the flour in with the butter, then introduce the milk, pepper and salt. Allow the mixture to reach a pleasing thickness, all the while continuing to stir.
Step4
Introduce the crab meat and avocado chunks and mix all that together, then using your hands, flatten this mixture into oval-shaped patties.
Step5
Dredge the patties in the crumbs, then the eggs, then the crumbs again.
Step6
Lower the patties into the hot shortening and allow them to brown, then drain them on paper towels.
