Difficulty: Moderately Easy
Things You’ll Need:
- 1 1/2 lbs. Chicken breasts
- Sweet Baby Ray’s BBQ Sauce
- Shredded mild cheddar cheese
- Flour tortillas
- Butter
Step1
Barbeque. Fire up the grill and put on the chicken breasts. Keep a close eye on them, they should be small and cook quickly. Add a little salt and garlic salt as you turn them. Just make sure not to dry them out. They should be off the grill within 12 minutes but always make sure they are sufficiently cooked.
Step2
Cut that meat. Once the chicken is off the grill cut each piece into very small pieces. They don’t have to be neat cuts or a particular size. Just make them small enough to fit onto a quesadilla.
Step3
Getting closer. Butter a frying pan lightly and lay in one flour tortilla. Now spread a good amount of Sweet Baby Ray’s across the majority of the tortilla. A general spiral of BBQ sauce works well. Then put in a good amount of the cut up chicken. Spread it out across the tortilla. Finish with a sprinkling of shredded mild cheddar cheese. Use your discretion here; just consider what flavor you want to have most predominantly. I personally let the BBQ sauce be the dominant factor.
Step4
Final touches. Put another tortilla on top. Then just make it like a regular quesadilla. Just be careful when flipping it over because of the overloaded content. Cook until lightly browned and slightly crunchy. Once they are done, put it on a flat surface and cut it into fours. Enjoy.
