There are so many types of onions it can be confusing. There are red ones, yellow ones, white ones, and green ones. Which one do you choose for your recipe? Here is what you need to know when choosing an onion.

  1. Step 1

    Yellow onions are a good choice if you want a good all-round onion. They have lots of flavor, but aren't overly flavorful. Some, like the Vidalia, are very sweet and are good for things like onion soup and onion rings.

  2. Step 2

    Red onions are best in fresh dishes such as salads because they are crisp and have a lighter taste.

  3. Step 3

    White onions are best in Mexican food and sauteed dishes because they are easy to caramelize and have a beautiful color when cooked in oil. They are sweet and mild tasting.

  4. Step 4

    Green onions are used for salads and stir-fry. Many people eat green onions as a side dish, served fresh.

  5. Step 5

    To choose the best onion look for tight, dry skin. Avoid onions that have black spots on the skin. The black could be mold or dry rot.
