How to Make a Fruit, Nut and Ricotta Tortilla

Tortillas are not just for savory food. They're also for delicious sweet fillings and are just perfect for a healthy dessert. Try this scrumptious version and feel happy that you've made a healthy dessert choice. And, these also make great breakfast delights. The recipe makes enough for 2, so add more ingredients for more people.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1/2 cup / 125 ml ricotta cheese
  • 1 tablespoon / 15 ml honey
  • 1/8 teaspoon / .5 ml finely grated lemon peel (wash lemon first)
  • 1/4 teaspoon / 60 ml dried fruit and nut mixture of choice
  • 1 average sized tortilla, preferably wholewheat
  • cinnamon to taste

Step1
Mix the ricotta, honey and lemon peel.
Step2
Pour the fruit and nut mixture into a small bag and seal. Using the flat side of the blade of a knife, crush the nuts in the mixture (if you can separate just the nuts and do this, it is a little easier but it is not necessary).
Step3
Add the fruit and nut mixture to the ricotta. Mix together.
Step4
Spread the mixture on a tortilla. Sprinkle with cinnamon.
Step5
Roll up the tortilla. Cut in two and serve.

Tips & Warnings

  • This tastes great both fresh or heated. If you'd like to heat it, add it to the microwave for 30 seconds. Mmmmm!
  • Take care using the knife to crush the nuts.
  • Always wash the lemon peel before grating.
