Things You'll Need:
- 1 14-oz. bag sweetened flaked coconut
- 4 egg whites
- 2/3 cup granulated sugar
- 1/3 cup flour
- 1/4 tsp. salt
- 1 tsp. vanilla extract

Step 1
Preheat the oven to 325F. Line a cookie sheet with parchment paper.

Step 2
In an electric mixer or with a hand mixer, whip the egg whites and sugar to stiff peaks. Add all remaining ingredients and fold together gently just until combined.

Step 3
Use a small scoop or two spoons and scoop into small mounds on the cookie sheet. I like to make them look like little pyramids. Bake for 20 to 25 minutes, or until golden brown.
