These are the yummiest coconut cookies. I keep all the ingredients on hand in case I want a quick batch of cookies!

Instructions

Things You'll Need:

  • 1 14-oz. bag sweetened flaked coconut
  • 4 egg whites
  • 2/3 cup granulated sugar
  • 1/3 cup flour
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  1. Step 1

    Preheat the oven to 325F. Line a cookie sheet with parchment paper.

  2. Step 2

    In an electric mixer or with a hand mixer, whip the egg whites and sugar to stiff peaks. Add all remaining ingredients and fold together gently just until combined.

  3. Step 3

    Use a small scoop or two spoons and scoop into small mounds on the cookie sheet. I like to make them look like little pyramids. Bake for 20 to 25 minutes, or until golden brown.

Tips & Warnings
  • For extra flavor, drizzle the macaroons with melted dark chocolate after they're cooled.
  • These cookies freeze extremely well, just be sure to wrap them in plastic wrap really tightly.
