Bake Gluten-Free Chocolate Brownies

These brownies are so easy and delicious, you'd never know they're gluten-free!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 5 ounces dark chocolate
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1 cup light brown sugar, packed
  • 1 tsp. vanilla extract
  • 1/2 cup ground almonds
  • 1/4 cup white rice flour
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  1. Step 1

    Preheat the oven to 350F. Line an 8 inch square baking dish with foil and spray foil with nonstick cooking spray.

  2. Step 2

    Melt dark chocolate and butter together in microwave in 25 second intervals, stirring often, until smooth.

  3. Step 3

    In a large bowl with whisk, combine eggs and brown sugar. Beat until smooth. Add in chocolate mixture slowly, stirring well to combine. Add in vanilla extract.

  4. Step 4

    In a medium bowl, stir together all remaining ingredients. Add to wet mixture, stirring just enough to combine. Pour into pan (mixture will be very liquidy). Bake for 30 to 35 minutes, or until just set. Cool in pan on wire rack.

Tips & Warnings
  • For an extra chocolate flavor, add a sprinkling of chocolate chips on top.
  • Chopped pecans add great texture to the batter.
  • These brownies are better when slightly under baked and gooey in the center.
