Things You'll Need:
- 1 low fat graham cracker crust (store-bought).
- butter spray
- 1 package of sugar free, bake and serve pudding mix.
- 1 and 1/8 cup of skim milk
- 1/4 cup Splenda
- 4 medium apples; I prefer two sweet (Fuji) and two sour (Granny Smith).
- apple pie spice (cinnamon, nutmeg, etc.)
- 1 package of low sugar apple and cinnamon oatmeal.
- 4 ounces low fat cream cheese.
- sugar free or low fat caramel.

Step 1
Prepare the pie crust by spraying it with butter spray. Make sure it is thoroughly coated. Place it in an oven at 350 degrees for 5 minutes. Take it out to let it cool, but leave the oven on.

Prepare your apples by peeling and slicing them. Slices should be no more than 1/4" thick. After your apples are peeled, place them in a large mixing bowl. Add the pudding mix and one cup of milk. Season to taste with the apple pie seasoning, and add the Splenda. Mix thoroughly. Let the mix sit for a few minutes to season the apples.

Prepare the caramel and cream cheese. Cut up the cream cheese into cubes, add the 1/8 cup of milk and a half cup of caramel in a microwave safe bowl. Microwave on medium power until mixture is very soft. With a fork, mix the mixture together.

Assemble the pie. Add the apple mixture to the pie and cover with the cream cheese and caramel mix. Cover the add the oatmeal evenly to the top of the pie as a "top crust." Spray the top of the oatmeal with either spray butter or butter flavored cooking spray to moisten it.

Bake the pie. The pie should bake for approximately 45 minutes (or until the pudding begins to boil) at 350 degrees. After the pie bakes and cools, top with more caramel if you wish.
