How to Make Easy Chicken & Vegetables

This is a main dish that is great if you don't feel like slaving over a hot stove frying chicken in a pan or boiling vegetables. If you have other things you need to do, but still need to make supper, this is a perfect multi-tasking meal. I make this for dinner at least once a week, makes it easy for me to still cook supper while chasing around a two year old!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 boneless skinless chicken breasts
  • 1 or 2 packages of your favorite frozen veggies
  • bread crumbs
  • butter
  • garlic powder
  • grated cheese

Step1
Take a paper plate or dish and sprinkle enough bread crumbs onto the plate that will cover and bread each of the 4 chicken breasts. Take each breast and lay onto the plate, flipping each one, so that they are well coated in the bread crumb mixture.
Step2
Place each breast into a large rectangular greased baking dish. Lay each chicken breast next to each other in a line. Place a few spoonfuls of butter on top of the chicken. Reserve the bread crumbs off to the side, do not discard yet.
Step3
Take 1 or 2 packages of your favorite frozen veggies and line the frozen vegetables around the chicken close to the sides of the baking dish. Place a few spoonfuls of butter on top of the vegetables.
Step4
Take the extra bread crumbs and sprinkle over the vegetables and dabs of butter. Sprinkle entire dish with garlic powder and some grated cheese. Place in the oven uncovered at 400 degrees for about 45 minutes or until the chicken is cooked through.

Tips & Warnings

  • For extra flavor you can use McCormick Parmesan Herb seasoning and sprinkle it over the entire dish either instead of the garlic powder or in addition to the other seasonings.
  • Placing a top layer of shredded sharp cheddar or swiss over this dish adds extra flavor.
  • If you want more chicken to your dish, you can cut each breast down the middle so you are left with more pieces of chicken, this will result in thinner chicken breast strips.
  • You can serve this dish by itself or you can prepare side dishes of mashed potatoes, stuffing, or gravy. A mock wine gravy also goes well with this dish. You can find the mock wine gravy recipe in with my other articles.
  • Have no fear that preparing side dishes will take longer. Simply use a package of instant mashed potatoes or a box of Pepperidge Farm chicken stuffing mix. They take only minutes to prepare.
  • In the middle of cooking you may have to mix around some of the vegetables so that the tops of them do not get too crispy because of the bread crumbs. Make sure veggies are slightly tossed so that the melted butter coats them somewhat.
  • Frozen vegetables, when cooked in a dish in the oven, WILL shrink considerably from their original size when frozen. This is why I say to use 1 or 2 packages, sometimes 1 package shrinks so much that you don't get much veggies to the dish. It is up to you how much vegetables you want with your chicken.
