Easy to make, these eye-catching cupcakes are perfect for spring time parties or even for the adults at a children's birthday party.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 3/4c. butter, softend
  • 3/4c. sugar
  • 3 eggs
  • 1 tea. vanilla extract
  • 2c. self-rising flour
  • 1/2c milk
  • 1 can (15-3/4oz) lemon pie filling
  • 40 pieces red and/or black shoestring licorice (2 inches)
  1. Step 1

    Preheat oven to 350F

  2. Step 2

    In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla.

  3. Step 3

    Then add flour to the mixture alternately with milk. Beat well after each addition.

  4. Step 4

    Fill greased muffin cups half full, and bake at 350F for 15-20 minutes. Do a toothpick test to make sure the cupcakes have cooked fully.

  5. Step 5

    Let cool for around 10 minutes and then transfer to the cupcakes to wire racks and allow to cool completely.

  6. Step 6

    Cut off the top fourth of each cupcake ("the muffin top"); cut the slices in half. Spoon 1 Tablespoon of pie filling onto each cupcake.

  7. Step 7

    Place two halves upside down on top of the filling to create wings, and insert two pieces of licorice for the antennae.

Tips & Warnings
  • The basic concept of these cupcakes can really be applied to any cupcake recipe, so if you are filling creative go ahead and use that new or favorite recipe.
