How to Make Chipotle Shrimp Tacos

Chipotle powder, which is made from dried and roasted jalapeno peppers, can be used to spice up a variety of Mexican dishes, including tacos, burritos and enchiladas. By adding chipotle to a basic shrimp taco recipe and adding guacamole or salsa, you can make a delicious and easy-to-prepare meal for your friends and family.

Instructions

Things You'll Need:

  • Stove top or barbecue grill
  • Mixing bowl
  • Strainer
  • 1 lb. peeled and de-veined shrimp
  • Two limes
  • Eight tortillas
  • 1 tsp.salt
  • 1 tsp. chipotle chili powder
  • 1 tbsp. olive oil
  • Guacamole
  • Salsa
  • Sour cream
  • Cilantro
  • Wet towel
  • Microwave oven
  1. Step 1

    Heat your stove top or open grill to between the medium and high setting to make chipotle shrimp tacos. An open grill is preferable, since it will add the right charred look to the individual shrimps.

  2. Step 2

    Wash the shrimp in a strainer, ensuring that all of the veins have been removed. You can simply pinch the end of each vein as it protrudes from the body of the shrimp and pull cleanly away. Use cold water to rinse the shrimp.

  3. Step 3

    Remove all excess water from the shrimp and place them in a bowl. Sprinkle the olive oil over the shrimp, adding the chipotle chili powder and the salt. Mix the shrimp and the seasonings thoroughly until everything is coated.

  4. Step 4

    Place each shrimp carefully on the grill. Cook each side of the shrimp until it appears translucent, which takes roughly 1 1/2 to 2 minutes per side.

  5. Step 5

    Grill the tortillas along with the shrimp, warming them for about 20 seconds on each side, or until they are slightly charred. Use corn tortillas, which can be purchased in "taco-size," for the best results. You can also wrap the tortillas in a wet towel and place them in the microwave for 20 to 30 seconds as well.

  6. Step 6

    Place a few shrimp in each tortilla. Cut the two limes in half and squeeze over the tacos. Add other toppings to taste and serve. Remember that your chipotle shrimp tacos will taste best when served right off the grill.

  7. Step 7

    Serve your chipotle shrimp tacos with refried beans and white rice for a traditional Mexican meal. This recipe should make enough tacos for three to four people.

Tips & Warnings
  • Chipotle shrimp tacos are delicious when served with guacamole, fresh salsa, sour cream and a sprig or two of cilantro on the side. Add a little chopped radish on the side for a little color.
