How to Make Green Tomatillo Mole

Green tomatillo mole is a versatile sauce used in Mexican cuisine. You can make green tomatillo mole to top nachos, pour over sauteed chicken breasts or even use it as a salad dressing.

Instructions

Things You'll Need:

  • 3 oz. pumpkin seeds
  • 3 oz. pine nuts
  • 3 cups unsalted chicken stock
  • 12 oz. washed and husked tomatillos
  • Two jalapeno or serrano chilies
  • 1/2 medium onion
  • Three garlic cloves
  • Four sprigs of cilantro
  • 1/4 tsp. cumin seeds
  • 3/4 tsp. ground cinnamon
  • Two whole cloves
  • Salt to taste
  • 1 tbsp. safflower oil
  1. Step 1

    Make green tomatillo mole by roasting the pumpkin seeds and pine nuts in a frying pan. Wait until the pine nuts turn brown and the pumpkin seeds start to pop open before removing them from the heat, and place them in a blender or food processor.

  2. Step 2

    Pour 1 cup of the chicken stock into the blender or food processor, and grind the mixture until it is smooth. Drain the mixture through a colander or sifter and then set the mixture aside.

  3. Step 3

    Place the tomatillos in a large saucepan, and then cover with water. Remove the seeds, stems and membranes from the serrano or jalapeno peppers, chop into smaller pieces, and throw them in the saucepan as well. Bring the tomatillos and chilies to a boil, and then simmer for 10 to 15 minutes.

    Drain the tomatillos and the chilies, and pour them into the blender or food processor. Add the cilantro, onion, garlic and all of the spices to the mixture as well. Blend the ingredients until you achieve a smooth consistency for your green tomatillo mole.

  5. Step 5

    Put the safflower oil into a saucepan, and heat it until it completely coats the bottom of the pan. Pour the chicken stock and seed mixture into the pan and stir it until it thickens. This should take about 5 minutes.

  6. Step 6

    Add the ingredients in the blender to the saucepan, and stir constantly until it thickens again. Then add the remaining 2 cups of chicken broth, stir, and cover the saucepan partially. Allow the green tomatillo mole to simmer for around 30 minutes, stirring occasionally.

  7. Step 7

    Salt and season the green tomatillo mole to taste once you have finished simmering it. Allow it to cool, and then serve. You should have roughly 3 cups of green tomatillo mole sauce when you are done.

Tips & Warnings
  • You can make and freeze additional amounts of green tomatillo mole for later, since it will stay relatively fresh.
