How to Make Koulourakia

Koulourakia are Greek biscuits that are traditional and popular foods for Easter. This treat, which has an egg glaze on top, is especially good dipped in coffee or enjoyed with afternoon tea. Show off with this recipe for Koulourakia Kanelas, which are Greek cinnamon biscuits.

Instructions

Things You'll Need:

  • 4 eggs
  • 1 egg yolk and 1 egg white separated from each other
  • 1 1/4 cups sugar
  • 10 cups flour
  • 3 tbsp. cinnamon
  • 1 tsp. ground cloves
  • 6 oz. melted and cooled butter
  • 8 oz. lukewarm milk
  • 2 tsp. baking ammonia
  • 2 tbsp. water
  • Electric mixer
  • Large mixing bowl
  • Baking sheet
  • Glazing brush
  1. Step 1

    Beat the eggs with the sugar with the electric mixer for about 5 minutes. The mixture should be frothy.

  2. Step 2

    Sift the spices and flour in a large mixing bowl.

  3. Step 3

    Create a bowl or cavity in the flour mixture and pour in the butter. Mix with your hands until it is blended well.

  4. Step 4

    Dissolve the baking ammonia in the milk. Add this milk to the flour mixture.

  5. Step 5

    Join the egg mixture with the rest of the dough.

  6. Step 6

    Knead the dough thoroughly until it appears consistent. It should no longer stick to your hands when you work with it.

    Place the dough onto a greased baking sheet and make it into any shape you desire. Traditional Greek biscuits are usually shaped into braids or an "S" shape.

    Brush the bread with the mixture of egg white and water. This will be your egg glaze that gives the biscuit a nice, shiny glow.

    Bake the Koulourakia for 20 to 25 minutes in an oven preheated to 300-degrees F. Store the baked goods in a tightly sealed container.

Tips & Warnings
  • You can prepare this recipe about 3 hours ahead of time. Just place the dough in the refrigerator in an sealed container.
  • You can shape the Koulourakia anyway you want if you don't want to make the traditional Greek shapes. Koulourakia can also be made into rings or ovals. Get some ideas from Aki's Kitchen (see Resources below).
  • You can have several variations on a Koulourakia recipe. For example, make these biscuits with sesame seeds. You can also try sprinkling sugar or cinnamon on top before baking.
  • Baking ammonia may be hard to find in grocery stores. This product is usually found in drug stores.
