How to Make Eastern North Carolina Corn Bread

There is a type of corn bread found in eastern North Carolina, that is very difficult to find anywhere else. Its kind of like a corn brownie. This corn bread is very sweet and dense. Everyone that I know who makes it has their own unique recipe, but here is the basic idea.

Instructions

Things You'll Need:

  • 8 x 8 inch pan
  • 1 T. shortening
  • 1 end slice of loaf bread
  • 1 1/2 cups of milk
  • 1 cup corn meal
  • 1 egg
  • 1 t. salt
  • 3/4 cup sugar
  1. Step 1

    Put a tablespoon of shortening in an 8 x 8 pan and put it in the oven. Preheat the oven to 350 degrees.

  2. Step 2

    Break up the piece of bread into small bits and put them in a medium sized bowl.

  3. Step 3

    Add 1/2 cup of milk to the bread and stir to moisten.

  4. Step 4

    Stir in the corn meal, egg, salt, and sugar.

  5. Step 5

    Add 1 cup of milk and stir well.

  6. Step 6

    Pour the batter into the pre heated pan. If the oil puddles at the corners on top of the batter, use a spoon to drizzle it around the top of the cornbread.

  7. Step 7

    Bake until lightly browned and firm.

Tips & Warnings
  • If you prefer to substitute vegetable oil for the shortening do not put the pan in the oven while it is pre heating.
