Things You'll Need:
- 1 can Pink or Red Salmon
- 1/2 Medium Onion (chopped)
- 1 Large Egg
- 1 Tablespoon Corn Meal
- 1/2 Cup Saltine Cracker (Crumbs)
- Dash of Black Pepper
- Dash of Salt
- 1 Tablespoon Flour
- 1/4 Teaspoon Seasoning Salt(Optional)
- 2 Cups Vegetable Oil
- A Cast Iron Skillet or Fry Pan
- Equal parts; 1/4 Cups Mayonnise and Ketchup
- 6 Tablespoons Louisiana Hot Sauce.
- 1 Squeezed Lemon

Step 1
Drain salmon, discard liquid. Mix salmon, chopped onion, egg, flour, cornmeal,salt, pepper, (crumbled)saltine cracker crumbs and season salt. Do not over mix. Mix enough to get all ingredients moist by the egg. Let the mixture set for 15 - 20 minutes.

Step 2
Heat the vegetable in the skillet over medium heat until hot,(approx. 325 degrees). After the salmon mixture has stood for 15-20 minutes, take 2 Tablespoons of the mixture and form into patties, by patting them in your hands until uniform.
Place the patties in the hot vegetable and cook each side for 2-3 minutes. Just long enough to brown each side.
Drain the patties on a platter lined with paper towels. -
Step 3
In a mixing bowl, combine the Mayonnaise, Ketchup, Louisiana Hot Sauce and the juice from the lemon.
You can add more Louisiana Hot Sauce if you want the patties spicier.
Dip the salmon in the sauce and eat while hot or warm.
