Sweet potatoes are crop plants with large sweet tuberous roots. Sweet potatoes are a good source of fiber, vitamins A, C and B6, come in a variety of colors, and are often confused with yams. Yams are typically denser, starchier and dryer than sweet potatoes. Botanically speaking, yams are members of the lily family, whereas sweet potatoes are members of the morning glory family. To make a delicious sweet potato side dish, choose sweet potatoes that are white to yellowish in skin and flesh color.

Things You'll Need:

  • 4 large sweet potatoes (approximately 6 cups cubed)
  • 1/4 cup butter or margarine
  • 1/2 cup milk

    Wash and clean the sweet potatoes.

    Peel the skin off the sweet potatoes and discard the skins.

    Bring the sweet potatoes to a boil over high heat. Boil for about 20 to 25 minutes or until the sweet potatoes are soft. Use a spoon to skim off and discard any foam that develops.
