How to Avocado Bread

It sounds not so nice but avocado bread is actually quite delicious. This is a sweet, moist bread with a great consistency. Plus its got a slight green tinge to it, which is kind of hilarious.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 9X5 loaf pan
  • 1 fork
  • 2 bowls
  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 1.5 tsps baking powder
  • .5 tsp baking soda
  • .5 tsp salt
  • 1 egg
  • 1 ripe, medium sized avocado
  • .5 cup buttermilk
  • .5 cup chopped pecans (optional)
Step1
Pre-heat oven to 375 degrees and prepare your loaf pan. (Grease it with butter or lard).
Step2
Sift together flour, sugar, baking powder, baking soda and salt into large bowl.
Step3
Peel and de-pit avocado. Mash it into a separate bowl with a fork. Add egg to avocado and beat together. Stir in buttermilk.
Step4
Add dry mixture to wet mixture and stir until just blended. Stir in pecans if using.
Step5
Spoon into your loaf pan and cook 50-60 minutes. You'll know its done when you begin to smell the deliciousness and when the toothpick you stick in the middle of it comes out cleanly.

Tips & Warnings

  • You may need slightly more or less buttermilk according to the humidity in your area (yup, it makes a difference!) If the batter is too thick and unworkable, add a little more buttermilk.
  • You can add more sugar if you want this bread to be really sweet. The original recipe I based this from called for much more, but I don't think you need it.
  • Make sure you are using a ripe avocado. It will give when squeezed but won't be too soft or have begun to turn brown inside. The peel will be easy to remove.
