When I lived in the Caribbean, this salsa was served over everything but I think its best with shrimp or fish. Its light, easy and good for you. What more could you want?

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 tomato
  • 1-2 limes
  • 1 ripe mango
  • 1 ripe avocado
  • 1 jalapeno chili
  • 2 green onions

Step1
Peel mango and cut the flesh from around the pit. Dice. Thinly slice green onions. Peel and dice avocado. Dice tomato and mince jalapeno, being careful to remove the seeds.
Step2
Combine mango, onion, tomato and jalapeno. Juice lime(s) over the top to taste. Add avocado. Salt and pepper to taste.
Step3
Spoon over fish, chicken or shrimp for a delicious summertime meal!

Tips & Warnings

  • There's no easy way to cut and peel a mango. But they taste so good, they're worth it!
  • If you're not into heat, leave out the jalapeno.
  • This salsa doesn't keep well, so eat it the same day you make it.
