How to Make A Chicken and Sweet Potato Bake

Easy to make, but takes awhile to bake. Delicious on Sunday afternoon!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 whole chicken, cut into pieces
  • 1 onion
  • olive oil
  • salt and pepper
  • syrup (preferably maple)
  • 3-4 sweet potatoes
  • fresh thyme

Step1
Pre-heat oven too 400 degrees. Peel and chop sweet potatoes into chunky pieces. Chop onion into large wedges.
Step2
Rinse and dry chicken pieces and place in casserole dish. Place onion, sweet potatoes and chicken into baking dish. Drizzle with olive oil and generously salt and pepper.
Step3
Drizzle syrup over dish. Place thyme on top and bake for about an hour or until juices in chicken run clear.

Tips & Warnings

  • Your oven's temperature will vary. You may need more or less time that recommended here to fully bake chicken.
  • In a perfect world, baste the veggies once or twice during the hour to make sure they don't dry out.
  • Have your butcher cut up your chicken for you- it only takes a minute, its free and its MUCH easier than doing to yourself.
  • Make sure that all sweet potato bits are submerged in the chicken juices and not lying on top of the chicken pieces or they won't bake all the way through.
