How to Make Apricot Pork Chops

A great recipe for a weekday night. Simple, easy and fast!

Instructions

Difficulty: Easy

Things You’ll Need:

  • Salt and Pepper
  • Olive Oil
  • Pork Chops
  • Apricot Jam
  • Bread Crumbs

Step1
Pre-heat oven (or toaster oven if cooking for only 1 or 2) to 415 degrees. Brush a baking sheet with olive oil.
Step2
Generously salt and pepper pork chops on both sides. Drizzle olive oil over chops and massage into meat.
Step3
Spread an even layer of apricot jam over each chop and cover with bread crumbs. Gently pat crumbs into jam layer.
Step4
Place on oiled sheet and bake until bread crumbs are golden and juices run clear. 13-15 minutes in a regular oven, 10-12 in a toaster oven.

Tips & Warnings

  • Your oven's temperature will vary so begin checking a few minutes before you think they should be done.
  • Substitute torn up slices of sandwich bread if you don't have any bread crumbs. Just make sure to moisten the crumbs slightly with olive oil so they'll crisp up nicely in the oven.
