How to Make Warm Bean Tuscan Salad

If you are watching every carbohydrate you eat or just looking for the right healthy carbs, this is a recipe for you. This is a white bean recipe which makes for a light, quick lunch and best of all, meets all the requirements of a glutten free and diabetic diet. These warm tuscan beans can be served alongside a broiled chicken breast for a heartier meal as well.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 can (15 oz.) white kidney or cannellini beans
  • 1 small onion, thinly sliced
  • 1 medium green pepper, chopped
  • 1 clove garlic, minced
  • 3 tsp. olive oil
  • 1 large tomato, coarsely chopped
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • non-stick cooking spray
  • non-stick large skillet

How to Make Warm Bean Tuscan Salad.

Step1
Drain beans and set aside.
Step2
Spray your large non-stick skillet with non-stick cooking spray (preferably the olive oil flavored kind).
Step3
Saute the onion, green pepper and garlic in the olive oil until tender.
Step4
Stir in the tomato which should be coarsely chopped. Add the seasonings and cook about 5 minutes longer.
Step5
Add the beans you drained earlier and stir until heated through.

Tips & Warnings

  • If beans are tough on your constitution, try adding a little bit of cinnamon to the recipe. A tsp. of cinnamon works well for any bean recipe including chili.
