Ounce for ounce, chicken is one of the lowest-fat meats around. Prepared the right way, chicken is low in calories, cholesterol and has no carbohydrates. Enjoy Heart Healthy Chicken with Rice recipe.

Instructions

Things You’ll Need:

  • 4 split chicken breasts
  • cooking spray
  • 1 can low sodium chicken broth
  • 3/4 cups rice
  • 1 (4 oz) can mushroom stems & pieces
  • 1/3 cups sliced almonds
  • 1 tbsp. butter
  • Pepper to taste
  • Onion powder to taste
Step1
SKIN and rinse split chicken breast. Spray skillet with cooking oil and brown chicken.
Step2
BRING chicken broth, rice and mushrooms to boil and keep at boiling for 5 minutes. Brown sliced almonds in butter and stir into rice. Add pepper and onion powder.
Step3
POUR rice into casserole, place chicken on top. Cover and Bake at 325 degrees for 45 minutes.
