How to Make Healthy Orange Stir-Fry Chicken

This is one of my own creations that can be whipped together for a quick and virtually fat-free dinner entree.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 cup Soy Sauce
  • 2 dried red peppers
  • 2 diced boneless chicken breasts
  • 1 large diced yellow onion
  • 5 1/8 cups water
  • 1/4 c cornstarch
  • 4 T crushed garlic
  • 2 T ground ginger
  • serve over rice or noodles

Step1
Bring onions, chicken and 2 cups water to a boil. Reduce heat and cook until the onions are clear and soft.
Step2
Add soy sauce, ginger, dried red peppers (split in halves), and 3 cups water.
Step3
Cut orange in half and juice with a manual juicer. Add juice to mix.

Use a paring knife to remove rind of 1/4 of the orange and add pieces to mix. Continue cooking on low for 20 minutes.
Step4
Mix cornstarch with 1/8 cup cold water. Add to sauce and cook on low stirring continuously for 1 minute to thicken.
Step5
Remove from heat and serve over rice or noodles.

Tips & Warnings

  • This entree is great served with vegetable spring rolls.
  • Do not eat the red peppers or the orange rinds as the flavor is intense.
