How to Make Breakfast Chilaquiles

Chilaquiles are a warm, comforting way to start the day, especially with a hot cup of coffee. Good chilaquiles basically deliver the essentials of beans, egg, tortilla chips and sauce mixed into a delicious dish. If there's not much time in the morning, but you love your Mexican food, here is a quick and easy way to get your breakfast chilaquiles fix:

Instructions

Things You'll Need:

  • Tortilla chips
  • Salsa
  • Beans (whole or refried, pinto or black)
  • Eggs (one or two)
  • Chopped onions (optional)
  • Crushed tomatoes, tomato sauce or paste (optional)
  • Vegetable or olive oil
  • Large frying pan
  • Small frying pan

    How to Make Breakfast Chilaquiles

  1. Step 1

    If you like onions, begin by sauteing one half cup chopped onions in oil at medium heat for ten minutes, stirring occasionally. Otherwise, skip to step 2.

  2. Step 2

    Heat one tablespoon oil in the large frying pan. Toss two to three handfuls of tortilla chips, a half cup beans and a half cup salsa into the pan. Stir. Continue to simmer on medium low heat.

  3. Step 3

    Fry one to two eggs in heated oil or butter, sunny side up in your small frying pan. When these are barely done (still soft), stir them into your chilaquiles. Everything will blend together.

  4. Step 4

    Enjoy hearty breakfast chilaquiles as they are, or with hot sauce or sour cream.

Tips & Warnings
  • If you like your dishes with extra sauce, stir in an extra half cup crushed tomatoes or tomato sauce (or alternatively, 1/4 tomato paste plus 1/4 cup water). Extra salsa is OK too.
