Difficulty: Moderately Easy
Things You’ll Need:
- 2½ lbs. of flounder
- 1 tbs. globe onion
- ½ cup buttered bread crumbs
- ½ cup Cheddar cheese
- Butter
- ½ bay leaf
- 1 cup chicken stock
- Sea salt
- Freshly-ground pepper
- ½ tbs. lemon juice
- ½ tbs. flour
Step1
Chop the onions and grate the cheese.
Step2
Chop the fillets into 5-inch pieces and arrange in a baking dish that has been smeared with butter.
Step3
Melt 1½ tbs. butter, then mix in the onions and flour. Introduce the stock and bay leaf and simmer for 15 minutes, all the while continuing to stir.
Step4
Once this mixture has reached a sufficient thickness take out the bay leaf and add salt, pepper and lemon juice. Drizzle the mixture all over the fish.
Step5
Crumble the bread crumbs and cheese over the fish, and bake for 20 minutes at 425 degrees F.
