How to Make Boston-Style Steamed Brown Bread

A bread that is as Irish as a shamrock. However, you don't have to be Irish--or from Boston--to enjoy this dish!

Instructions

Things You'll Need:

  • 1 cup rye flour
  • 1 cup graham flour
  • 1 cup cornmeal
  • ¾ cup molasses
  • 2 cups buttermilk
  • 1 tsp. sea salt
  • ¾ tsp. baking soda
  • Butter
  • All-purpose flour
  1. Step 1

    Sift the rye flour, baking soda, cornmeal and salt, then add in the graham flour.

  2. Step 2

    Mix the buttermilk and molasses and introduce this into the dry mixture, then stir the whole thing together.

  3. Step 3

    Smear the butter along the sides and bottoms of 3 clean 1-lb. coffee cans, then dust with flour. The bread will be steamed in these cans.

  4. Step 4

    Fill each can with the bread mixture and stretch 2 layers of aluminum foil over the openings, then secure the foil with large rubber bands. Set each can inside a large, deep pot.

  5. Step 5

    Boil water, then pour it into each pot about halfway up.

  6. Step 6

    After a few minutes, bring the water up to a simmer, then leave the bread to steam for 3 hours.

  7. Step 7

    When the bread is done the 3 loaves should slide right out of the cans. Cut the bread with a string or a knife and serve hot and buttered.
