A classic French brown sauce best used with beef or fowl. It's a very versatile sauce, so once you master the basics, the sky's the limit!

Instructions

Things You'll Need:

  • 6 Vidalia onions
  • Dijon mustard
  • Kosher salt
  • Freshly-ground pepper
  • 1 cup beef stock
  • 1 tbs. lemon juice
  • 2 tbs. flour
  • 2 tbs. shortening
  • 1 tbs. mushroom ketchup
  1. Step 1

    Chop the onions into thin slices and grind the pepper.

  2. Step 2

    Sauté the onions in shortening.

  3. Step 3

    Once the onions have caramelized, stir in all the other ingredients. Continue to stir until everything reaches a rich, creamy thickness.

Tips & Warnings
  • Mushroom ketchup can be homemade or found in gourmet grocery stores, imported from Great Britain.
