How to Make Poblano Pepper y Queso Soup

Never had soup from Mexico? This is a good introduction, and will make a spicy addition to your lunch or dinner table.

Instructions

Things You'll Need:

  • ¼ lb. pork
  • 1 poblano pepper
  • 1 qt. chicken stock
  • 1 tbs. cooking oil
  • 1 cup kernel corn
  • 3 tbs. tomato purée
  • 1 small zucchini
  • ½ medium onion
  • 1 avocado
  • ¼ cup queso manchego viejo (cheese)
  • Sea salt
  1. Step 1

    Cube the pork, grate the cheese and slice the pepper and zucchini.

  2. Step 2

    Peel the avocado and remove the seed. Dice the avocado.

  3. Step 3

    Heat the oil in a saucepan and sauté the pork at 375 degrees F. Allow the pork to brown on both sides.

  4. Step 4

    Spoon in poblano pepper, zucchini, stock, tomato purée, onion and corn and allow all this to simmer until the vegetables become tender.

  5. Step 5

    Add the avocado, cheese and salt.
