How to Make Peanut Balls

An unusual but delicious fried dish. Make sure you avoid people with peanut allergies when serving this dish.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • ½ cup peanuts
  • 2 cups boil-in-bag rice
  • 2 eggs
  • Shortening
  • ½ cup milk
  • 2 tbs. flour
  • ½ tsp. kosher salt
  • Freshly-ground pepper
  • Cracker crumbs

Step1
Boil the rice and chop the peanuts into tiny fragments. Grind the pepper.
Step2
Beat the 2 eggs separately and pour into little bowls and reserve.
Step3
Heat the shortening in deep pan to 390 degrees F.
Step4
Mix the milk, flour, 1 tbs. shortening, salt and pepper to make a white sauce.
Step5
Mix the peanuts, 1 egg, sauce and rice. Roll all this into balls.
Step6
Dip the balls into the other egg, then dredge through cracker crumbs before frying in the hot shortening.
Step7
Drain on paper towels.
