How to Make Salmon Mornay

This is a very quick French fish dish. If you're in a hurry, this recipe is perfect!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 cups salmon
  • 4 New potatoes
  • ½ cup Gruyère cheese
  • 1 egg
  • Cracker crumbs
  • Butter
  • 1 cup milk
  • ¼ tsp. sea salt
  • 1/8 tsp. freshly-ground pepper
  • 4 tbs. flour

Step1
Warm up the milk in a saucepan and stir in 4 tbs. butter and flour. Grind the pepper. Bring all this to a boil and continue to stir.
Step2
Allow this white sauce to thicken, add salt and pepper and reserve.
Step3
Boil the salmon and potatoes in separate pots. Drain.
Step4
Separate the yolk from the egg white.
Step5
Mash the potatoes until they are free of all lumps. Smear into a buttered baking dish.
Step6
Mix the white sauce, egg yolk and cheese and pour ½ of this over the potatoes.
Step7
Spoon the salmon over this mixture and the rest of the sauce over that. Sprinkle on the cracker crumbs.
Step8
Place little pats of butter here and there over the surface of the whole.
Step9
Bake for 20 minutes at 350 degrees F.
