How to Prepare Deviled Chesapeake Clams

Another unusual clam dish. Once you make this dish, you'll never look at clams the same way!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 cups Chesapeake clams
  • ½ cup clam liquor
  • 1 cup cracker crumbs
  • ½ tsp. Dijon mustard
  • dash of hot pepper sauce
  • 1/8 tsp. freshly-ground pepper
  • 1 tsp. sea salt
  • 2 tbs. globe onion
  • 2 tbs. bell pepper
  • ½ cup celery
  • Garlic butter
Step1
Grind the pepper, crumble the crackers, mince the onions and peppers and chop the celery and the clams finely.
Step2
Pour the clams and clam liquor into a saucepan and simmer for 5 minutes.
Step3
Mix the pepper, celery and onion into another saucepan and cook in 4 tbs. of butter until the onions caramelize.
Step4
Stir in the clams, salt, pepper, hot sauce, mustard and all the other ingredients together and mix well.
Step5
Spoon the mixture into buttered ramekins and bake for 20 minutes at 350 degrees F.
