How to Prepare Shirred Bluepoint Oysters With Porcini Mushrooms

Shirring is a cooking technique not seen that often nowadays, but it is well-worth learning, as this recipe will attest.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 12 bluepoint oysters
  • 12 pieces of rye bread
  • 12 large porcini mushroom caps
  • 2 tsp. anchovy paste
  • 1½ cups milk
  • 1½ tbs. butter
  • 1½ tbs. flour
  • 1 tbs. onion juice
  • Butter
  • Lime juice
  • Sea salt
  • Paprika

Step1
Toast the bread, peel the mushrooms and melt the butter.
Step2
Carpet a baking dish with the toast and set the mushrooms on top of that.
Step3
Mix the butter, salt, paprika, butter and lime juice, then dredge the oysters through this mixture.
Step4
Place the oysters on top of the mushrooms and bake at 375 degrees F until the oysters are cooked all the way through.
Step5
Mix the onion juice, flour, anchovy paste, butter and milk. Drizzle this mixture over the whole dish.
