How to Prepare Raised Pecan Muffins

This is, or should be, a breakfast staple. After your family gets a taste, you'll be asked to make it all the time!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 egg
  • 4 tablespoons sugar
  • 3½ cups flour
  • 2 tbs. shortening
  • 1 cup milk
  • 1 cake yeast
  • ¾ tsp. milk
  • ¼ cup warm water
  • Pecans
Step1
Beat the egg white and yolk separately, chop the pecans finely, boil the milk and sift the flour.
Step2
Mix the milk, shortening, salt and sugar and allow to cool to a lukewarm temperature.
Step3
Mix the yeast and water. Add the yeast and 1½ cups flour to milk mixture, then mix at a high speed with a mixer.
Step4
When the milk and yeast mixture has attained a light consistency add the 2 cups flour and egg yolk. Mix all this and allow it to rise.
Step5
Spoon out portions of the mixture and roll into balls bigger than a golf ball but smaller than a fist.
Step6
Place these balls in greased muffin pans. Daub egg white over the tops of the muffins, then crumble pecan bits over that.
Step7
Allow the mixture to rise yet again, then bake at 425 degrees F until everything is golden brown.
