How to Prepare Monte Carlo-Style Fruit Bread

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 9 cups flour
  • 6 eggs
  • 2 cake yeast
  • 1 cup sugar
  • 1 cup shortening
  • 1 cup dates
  • 1 cup raisins
  • 1½ cups water, lukewarm
  • 2 tsp. kosher salt
  • 2 cups milk
  • Butter

Step1
Boil the milk and beat the eggs.
Step2
Mix the milk, sugar, shortening and salt, then add the yeast, the 1½ cups water and 4½ cups of flour and beat well.
Step3
Allow the mixture to rise, then introduce the raisins and dates, 4½ cups flour and eggs.
Step4
Knead the mixture, allow to rise, then put into buttered bread pans.
Step5
Allow to all this to rise yet again, then bake for 10 minutes at 400 degrees F, then reduce the temperature to 375 degrees F and bake for 40 more minutes.
Step6
Set aside to cool. Yields 3 loaves.
