Things You’ll Need:
- 1 lemon rind
- 3 tbs. lemon juice
- ½ cup sugar
- 2 eggs
- 3½ cups cake flour
- 1 tsp. baking soda
- 1½ tsp. baking powder
- 1½ cups honey
- Butter
- ½ cup shortening
- 1 tsp. kosher salt
- 1½ cups pecans
Step1
Chop pecans, grate the lemon rind and beat the eggs.
Step2
Sift the flour, soda, salt and baking powder.
Step3
Mix the sugar and shortening together.
Step4
Mix lemon juice, the grated lemon rind and the eggs and beat all three ingredients together.
Step5
Introduce the flour mixture, honey and pecans to the egg mixture.
Step6
Spoon mixture onto a buttered cookie sheet and cook for 15 minutes at 350 degrees F.
