How to Make Smothered Greens

Traveling in the South means stopping to eat at little roadway diners. You will fall in love with this meal, which blends the flavors of smoked turkey, hot pepper, garlic, ginger and greens, as much as sitting on a porch veranda drinking sweet tea. It takes an hour to make and much more than that to enjoy.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 3 cups of water
  • 1/4 lb. smoked turkey breast (skinless)
  • 1 tbsp. fresh hot pepper, chopped
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. cloves, ground
  • 2 cloves garlic, crushed
  • 1/2 tsp. thyme
  • 1 stalk scallion, chopped
  • 1 tsp. ginger, ground
  • 1/4 cup onion, chopped
  • 2 lbs. greens (mustard, turnip, collard, kale or mixture)

How to Make Smothered Greens

Step1
Place all ingredients except the greens into a large saucepan and bring to a boil. Boil 10 minutes then simmer.
Step2
Prepare your greens by washing thoroughly and removing stems.
Step3
Tear of slice leaves into bite-size pieces. Add these pieces to the simmering pot of ingredients.
Step4
Cook entire pot for another 20-30 minutes until the leaves are tender. This will allow everything in the pot to reduce down to greens and turkey.
Step5
This recipe makes five servings. If cooking for six or more, best to double the recipe!

Tips & Warnings

  • Serve with fresh cut slices of thick white bread.
  • Never add the stems to the pot. It will make the meal taste bitter, and the stems don't ever get tender.
