How to Make a Vegan Burger

You never know what you’re going to get in a vegan burger, whether you order it in a nice restaurant or pick it up in the frozen section of the grocery store. That’s what makes this recipe so special. Crunchy on the outside and tender on the inside, this vegan burger recipe bursts with french fried onion flavor.

Instructions

Things You'll Need:

  • 1 cup millet
  • 2 cups water
  • 1 red pepper, diced
  • One 8-oz package mushrooms, diced
  • ½ medium onion, shredded
  • 2 cloves minced garlic
  • 2 tbsp. canola or extra light virgin olive oil
  • 4 eggs made from egg replacement
  • 2 tsp. herb seasoning blend
  • ½ tsp. salt
  • ½ tsp. pepper
  • One 6-oz can french fried onions
  1. Step 1

    Boil millet in water. Lower heat, cover and simmer until water is absorbed and millet is tender, about 20 minutes. Add more water if necessary.

  2. Step 2

    Saute minced garlic in oil until a light golden brown. Immediately add diced red pepper, diced mushrooms and shredded onion. Sautee until onion is translucent, and red pepper and mushrooms are tender.

  3. Step 3

    In large mixing bowl, combine millet and sauteed mixture. Stir until all ingredients are evenly distributed.

  4. Step 4

    In separate mixing bowl, mix egg replacement, herb seasoning blend, salt and pepper. Add to millet and sauteed mixture. Stir well.

  5. Step 5

    Refrigerate vegan burger mixture for at least 1 hour.

  6. Step 6

    Crush french fried onions into fine crumbs. Shape vegan burger mixture into patties and cover in the french fried onions, patting them into place.

  7. Step 7

    Bake on ungreased cookie sheet in 350-degree oven for 30 minutes. Carefully flip burgers and bake another 30 minutes or until firm. If french fried onions start getting too brown, cover with foil.

Tips & Warnings
  • When simmering millet, keep a close eye on the water level. If the millet dries out during cooking, it sticks and burns easily to the bottom of the pan. If water runs out before millet is done, add more.
  • When flipping the burgers after the first 30 minutes of baking, do so carefully as they crack easily. If you do see cracking, gently push back together.
  • You may try frying your vegan burger in oil before baking. This will brown the french fried onions. You may want to cover with foil before baking and adjust the bake time accordingly, simply cooking until the burgers are firm.
  • Makes 6 to 8 vegan burgers.
